    How Do I Camp On The Beach In Santa Cruz? Me and my friends want to go to santa cruz this weekend (Cinco de Mayo weekend) and we are trying to camp out on the beach… only problem is every camp site near the beach is reserved for this saturday. So our plan is to find a spot on a beach that has some seclusion from people. Your not allowed to camp on the beach but we wont be setting up camp till late at night so getting caught on shouldnt be a problem… right?

    So my main question is if you know a place on or near Santa Cruz that i can camp on the beach (Hobo style) and get away with it? Also would getting caught be pretty bad? Thanks beforehand for all the help 🙂

    Relationship Advice. Please Help!!? I have been with my bf for 2.5 years. We have lived together since day one.. He is 32 going on 33 this year and I just turned 25 this month.. He is divorced and has a 6 year old son. I have never been married or have had any kids.. Well my issue is that I want to enjoy my youth.. I want to go clubbing go out dancing and drinking. I want to rave go to rehab etc… but my bf doesn’t want to do anything like that with me.. He always talks crap about clubbing says that he doesn’t understand why people do it and he hates drinking.. He is Korean so he has that thing where drinking alcohol makes him feel sick.. I usually get really involved in my relationship and my life basically rotates around my partner.. So to me its hard too… say go out by myself and do all this fun things with out him.. He just doesn’t want to though.. like we fight all the time because of this.. The first year he wouldn’t let me go out or drink without him getting mad at me so I never did. I felt like a little girl and like if he was my dad or something. He says that its immature and I need to grow up, that he has.. but he doesn’t understand that Im not 32 with a kid and previously divorced.. I have no responsibilities like he does.. So i should be able to do basically what I want without anyone judging me.. If i want to go to EDC this year and rave and do ecstasy then I should be able too.. Im still very young.. The last thing I want is to be the 35 year old chick at the club who left her kids at home with the babysitter…or the girl who cant go out because she doesn’t have a babysitter… I want to do all of that now that I can and get it out of my system but I feel like he doesn’t let me.. Now’ he says that I can’ go out if I want too, but I know that he doesn’t mean it… He sounds like those girls that u ask “Is somethings wrong with u, are u mad.?.” and they say ”Im fine, nothings wrong with me” but u know something is wrong and they are mad.. I feel so frustrated and depressed because I feel that being with him means that Im going to get robbed of my youth.. Every weekend Im going to stay home and not go out or do anything fun because we have to stay home with he’s son… Which most saturdays and fridays he’s son choses to spend the night at my bf’s sister in laws house anyway so I really don’t get why we still cant go out… Obviously my bf just hates going out so he will use he’s son as an excuse when he really isn’t.. Maybe if I had always known him to be “boring” but It wasn’t like that.. We fell in love while “rolling” in Las Vegas… Slowly he just started to become boring… Am I the one being selfish? or is he? Breaking up with him is not an option because no matter what I love him, but I don’t want to have had five years pass me by and nothing had changed and then I will resent him.. What should I do? What should I tell him so that he understands how important this is to me? I don’t care if he drinks but that he doesn’t judge me if i want too.. Im mexican and I want to celebrate Cinco de mayo this year but I know he is going too say no and its going to piss me off.. I really don’t like fighting with him but gosh I feel so annoyed and irritated…

    Is Arroz Imperial Authentic Cuban Food? Im in spanish two at my school and we have to make an authentic dish for our class for cinco de mayo. And It HAS to be authentic. arroz imperial looks really good and easy but Im not sure if its authentic. Help please?
    Oh and the reason Im not doing black beans and rice is because another kid is doing that. And I dont like fried bananas or plantains ( isnt that the same thing though?) so thats out of the list of possibilities.

      I have a couple of fav recipes

      Mexican Lasagna – One of my husband’s favorites. I rarely make casserole type dishes but this one is special. You can make it as spicy or mild as you like.
      1 lb hamburger
      1 sm onion
      ½ tsp garlic powder
      2 cans diced tomatoes
      1 can black beans – rinsed and drained
      1 can whole kernal corn – drained
      1 pkg Taco seasoning (mild, reg or hot)

      1 ½ cp sour cream
      1 ½ cp cottage cheese
      4 oz can chopped green chilies (even if you like it mild use at least a few chilies)

      1 bag corn chips
      ½ lb shredded cheddar cheese

      Preheat oven to 325*. In a lrg skillet brown the hamburger, drain. Stir in the onion and garlic. Let that cook over low heat while you rinse and drain the beans and corn. Add the tomatoes to the skillet. Stir in the taco seasoning till well blended. Add beans and corn.

      In a med bowl stir the sour cream, cottage cheese and green chilies together till well blended.

      Spray a 13”x9” oven dish with cooking spray. Spread 1/2 of the meat over the bottom of the oven dish. Layer with 1/2 of the sour cream mixture, sprinkle with corn chips and 1/2 of the cheddar cheese. Repeat layers.
      Slide the dish into the oven and bake 15 min to blend flavors and melt cheese.

      Black Bean Salsa
      1 (15oz) can Black Beans, Drained & Rinsed
      1 (15oz) can whole Kernel corn, drained
      3 or 4 Tomatoes chopped
      12 green onions, chopped
      2-3 Jalapeno, seeded and chopped (4 sm or 2 lrg)
      ¼ cp minced fresh cilantro
      ½ tsp garlic salt
      ¼ cup lime juice
      2 tsp ground cumin
      ¼ tsp pepper

      Blend all ingredients together. Refrigerate overnight before serving. Serve with Tortilla Chips.

      Churros
      1 cp water
      3 1/2 Tbls white sugar – divided
      1/4 tsp salt
      2 Tbls vegetable oil
      1 cp flour

      2 qts oil for frying

      ½ cp sugar
      2 tsp ground cinnamon

      In a small saucepan over med heat, combine water, 2 1/2 Tbls sugar, salt and veggie oil. Bring to a boil and remove from heat. Stir in flour until mixture forms a ball.

      Heat oil for frying in deep-fryer or deep skillet to 350*. (It’s important to keep the oil at the correct temp. If you don’t have a thermometer you’ll have to experiment.)

      Pipe strips of dough into hot oil using a Pampered Chef pastry piper and a ¾” tip. (Caution, dough will be very thick, don‘t overfill the pastry unit. You can use a Ziploc bag with a corner cut out. Strips of dough can also be rolled to ¾” by hand.)
      Fry until golden. Avoid touching them until they need to be turned as they may break up in the oil. You will need metal tongs to remove them from the oil. Drain on paper towels.

      Combine 1/2 cp sugar and cinnamon. Roll drained churros in the sugar mixture.

      Sopa de Albondigas (Meatball Soup)
      Broth:
      1 onion, minced
      2 cloves garlic, minced
      2 tablespoons oil
      ½ can whole tomatoes
      3 quarts beef stock
      Meatballs:
      1 pound ground beef or turkey
      1/3 cup raw rice
      1 ½ teaspoons salt
      ¼ teaspoon pepper
      1 egg, slightly beaten
      1 bunch fresh cilantro, chopped

      Wilt onion and garlic in oil. Add whole tomatoes and beef stock; heat to boiling. Mix meat with rice, egg, cilantro, salt and pepper. Shape into little balls. Drop into boiling broth. Cover tightly and cook 30 minutes. You can use carrots, celery, more rice, or more cilantro if desired. For the stock, mix 3 quarts of water with three beef bouillon cubes. For turkey, use chicken bouillon.
      **I usually use a whole can (big one) of the tomatoes.

    Do Most Restaurants Offer Catering Services? So it’s my sons 1st birthday on cinco de mayo (5th may), and we are probably going to do a mexican style taco buffet. I am a fairly good cook, but feel kinda overwhelmed with all the required cooking, cleaning, shopping etc. We anticipate around 20 people. We did taco parties in the past, and i spent a small fortune on ingredients and then spent the entire party grilling meat and fish!!! So basically we live in a small town in Washington state with many excellent small family run mexican restaurants. Will most of these provide catering (ie we go pick up large foil containers of meat, beans tortillas etc. Would this be incredibly expensive? Would my guests think i’m lazy…….? I can think of a couple of places with outstanding food….I’m going to call tomorrow for a quote. Just interested in others experiences. Also how do you keep food warm? Thanks!!

      Usually a restaurant will advertise it’s catering service, bit it couldn’t hurt to ask. If they have a take-out menu you could call a day ahead and ask if they could do a party order.

      Food is usually kept warm for catering with the use of chafing dishes. Basically what these are is a metal pan over top of steamy water, heated by flame or electricity. You can rent these from some professional caters, or they may provide them included in the price if you go with them for the food. Nobody would think you are lazy, hiring someone to do the cooking is generally considered classy.

    Is Banana Nut Bread Used For Any Cinco De Mayo Celebrations? I have a class project to make a Mexican dish for Cinco De Mayo. If anyone could help me out and give me some suggestions. I need something that’s not expensive to make, I have about $10 for getting ingredients.
