      Because meat was popular, especially with the upper classes, who could afford to eat more of it than poorer people. meat was cooked in various ways in medieval times. it could be roasted or boiled, and served with a variety of different sauces. Sauces were made with herbs ground to a paste, mixed with wine, verjuice (the juice of sour grapes), vinegar, onions, ginger, pepper, saffron, cloves, and cinnamon. meat was also made into pies, pasties, and fritters. There were also dishes like blancmanger, in which chicken was pounded to a paste, mixed with rice, boiled in almond milk, seasoned with sugar, and garnished with fried almonds and anise. Another dish was a mortrews, of fish or meat pounded, mixed with breadcrumbs, stock, and eggs, and poached, producing a kind of quenelle, or dumpling.
